Caraway seeds
The tiny, fragrant seeds of the biennial herb Carum carvi, a member of the parsley family, are used to make caraway. The herb is indigenous to Europe, Asia, and North Africa, where it has long been utilized for both culinary and medicinal uses. Caraway seeds were widely used for medicinal purposes in many civilizations before they gained popularity as a spice in cooking.
Caraway tastes and smells really strong. The predominant flavor is that of anise or licorice, with bright, warming notes from pepper and citrus. The licorice aroma is somewhat subdued and prevented from dominating the other flavors by a bittersweet character.
